(pronounced “chee”) Organic Chinese green and white teas grown at a high altitude; these teas are naturally sweeter and usually contain more antioxidants.  The leaf is processed within 2 hours of picking, which halts oxidisation and stops bitterness developing.  The flavours of the teas are complemented with natural, healthy herbs, fruits and spices.  Grown by the Xitou Farmers’ Association in the remote Yellow Mountains, the community benefit from Fairtrade by using the Fairtrade premium to fund local infrastructure, health and education initiatives.
